A ten-minute wok dinner — thin-sliced beef and blanched broccoli glazed in soy, oyster sauce and sesame.
Toss the beef strips with the cornflour and 1 tablespoon of the soy sauce. Set aside for 10 minutes.
Steam or blanch the broccoli for 2 minutes until bright green and just tender. Drain and set aside.
Heat the vegetable oil in a wok or large frying pan over high heat. Stir-fry the beef in batches for 1–2 minutes until browned, then remove.
Add the garlic and ginger to the wok and stir-fry for 20 seconds, then return the beef and broccoli to the pan.
Add the remaining soy sauce, oyster sauce and sesame oil, and toss everything together for 1–2 minutes until glossy and hot through. Serve over rice.
