A weeknight tomato sauce finished with cream and parmesan — ready in the time it takes the pasta to boil.
Cook the pasta in a large pot of salted boiling water until just al dente. Reserve a cup of the pasta water, then drain.
Meanwhile, heat the olive oil in a large pan over medium heat. Cook the onion for 5 minutes until soft, then add the garlic and cook for a further minute.
Pour in the crushed tomatoes, bring to a simmer and cook for 8 minutes, stirring occasionally.
Stir in the cream and parmesan, and simmer for 2 minutes until the sauce thickens slightly.
Toss the drained pasta through the sauce, loosening with a splash of the reserved pasta water if needed. Scatter with basil to serve.
