Spiced beef mince with all the fixings laid out so everyone builds their own — the way taco night should work.
Heat a large pan over medium-high heat and cook the mince, breaking it up as it browns, for 5–6 minutes.
Add the onion and garlic and cook for a further 3–4 minutes until the onion has softened.
Stir in the cumin, smoked paprika and chilli powder, along with a splash of water, and simmer for 5 minutes until the mince is well coated and the sauce has thickened slightly.
Warm the tortillas in a dry pan or the oven.
Set the mince, lettuce, cheddar, tomatoes and sour cream out for everyone to build their own, and pile the tortillas alongside.
